Ingredients
- 4 Slices Bacon Diced
- 1 Onion Medium, Chopped
- 2 Garlic Cloves Minced
- 2 cup Potatoes Peeled And Diced
- 1 cup Celery Chopped
- 2 cup Chicken Broth
- 2 cup Clam Juice
- 1 cup Heavy Cream
- 2 tbsp All-Purpose Flour
- 2 can Chopped Clams 6.5 Oz Each, Drained
- 2 tbsp Fresh Parsley Chopped
- Salt To Taste
- Pepper To Taste
Instructions
- In a Dutch oven or large pot, cook the bacon over medium heat until crispy.
- Remove the bacon with a slotted spoon and set it aside, leaving the bacon grease in the pot.
- Add the chopped onion and minced garlic to the pot and sauté for 5 minutes or until the onion is translucent.
- Add the diced potatoes and chopped celery to the pot and stir to combine. Pour in the chicken broth and clam juice, and bring the mixture to a boil.
- Reduce the heat to low and let the chowder simmer for 15-20 minutes or until the potatoes are tender.
- In a separate bowl, whisk together the heavy cream and all-purpose flour until smooth. Pour the mixture into the pot and stir until well combined.
- Add the chopped clams to the pot and let the chowder simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
- Ladle the clam chowder into bowls, and top with the cooked bacon and chopped parsley.
