Instructions
Boil the cubed potatoes in a large pot until they are soft, about 15 minutes.
Drain the potatoes and mash them in a mixing bowl until smooth.
Add the Parmesan cheese, parsley, chives, garlic, salt, and pepper to the mashed potatoes.
Mix well to combine.
Shape the potato mixture into small croquettes, about 2-3 inches long.
Dip each croquette in the beaten eggs, then coat with breadcrumbs.
Heat the oil in a frying pan over medium heat. Fry the croquettes until they are golden brown and crispy, about 2-3 minutes on each side.
Use tongs or a slotted spoon to remove the croquettes from the pan and place them on a paper towel-lined plate to drain excess oil.
Serve the croquettes hot and enjoy!
