This Bolo De Rolo recipe is a perfect dessert to add to your recipe collection. It's easy to make, and the combination of the fluffy cake layers and sweet guava paste filling is simply irresistible.
In a mixing bowl, beat the egg whites with an electric mixer until stiff peaks form.
In a separate mixing bowl, beat the egg yolks with sugar until the mixture becomes light and fluffy.
Gradually add the flour to the egg yolk mixture, and mix until well combined.
Gently fold in the egg whites to the egg yolk mixture until well combined.
Line a baking sheet with parchment paper and brush with vegetable oil.
Pour 1/4 cup of the cake batter onto the prepared baking sheet and spread it out into a thin layer using a rubber spatula.
Bake for 5-7 minutes or until the cake is lightly golden brown.
Remove the cake from the oven and immediately place a sheet of parchment paper on top of the cake. Roll the cake and parchment paper together tightly and set aside to cool.
Repeat steps 7-9 with the remaining cake batter, until you have four thin layers of cake.
Once the cake layers have cooled, unroll each layer, and spread a thin layer of softened guava paste onto each layer.
Roll up the cake layers one by one to form a log, and refrigerate for at least an hour before serving.
