Ingredients
- 1 lb Ground Chicken
- 1/2 cup Mint Leaves Fresh, Chopped
- 1/2 cup Fresh Cilantro Leaves Chopped
- 1/2 cup Scallions Chopped
- 2 tbsp Roasted Rice Powder
- 2 tbsp Fish Sauce
- 2 tbsp Lime Juice
- 2 tbsp Thai Bird Chilies Chopped, Adjust According To Spice Preference
- Lettuce Leaves, For Serving
- Sticky Rice Optional, For Serving
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the ground chicken and stir-fry until the chicken is cooked through and no longer pink.
- In a small bowl, mix together the fish sauce, lime juice, and chopped Thai bird chilies.
- Add the chopped mint leaves, cilantro, and scallions to the skillet with the chicken. Stir to combine.
- Pour the dressing over the chicken and herbs and stir to combine.
- Sprinkle the roasted rice powder over the chicken and herbs and stir to combine.
- Serve the Larb immediately on lettuce leaves. If desired, serve with sticky rice on the side.
