Ingredients
For The Crust:
- 1 cup All-Purpose Flour
- 1/4 cup Granulated Sugar
- 1/2 cup Unsalted Butter Cold And Cubed
For The Lemon Curd:
- 1/2 cup Freshly Squeezed Lemon Juice (About 2-3 Lemons)
- 1 Lemon Zest
- 1/2 cup Granulated Sugar
- 1/4 cup Unsalted Butter Melted
- 2 Eggs Large
- 1 Pinch Salt
Instructions
For the Crust:
- In a mixing bowl, combine the all-purpose flour and granulated sugar.
- Add the cold cubed butter and using your fingertips, rub the butter into the flour mixture until it resembles coarse crumbs.
- Press the mixture into the bottom and up the sides of a 9-inch tart pan to form the crust.
- Preheat your oven to 180°C (350°F) and bake the crust for about 15-18 minutes until it turns golden. Let it cool.
For the Lemon Curd:
- In a saucepan, whisk together the freshly squeezed lemon juice, lemon zest, granulated sugar, melted butter, eggs, and a pinch of salt.
- Place the saucepan over low to medium heat, stirring constantly with a wooden spoon until the mixture thickens and coats the back of the spoon (about 5-7 minutes).
- Remove the lemon curd from heat and let it cool slightly before pouring it into the baked tart crust.
- Chill the Lemon Tart in the refrigerator for at least 2 hours or until set.
- Garnish with fresh lemon slices or zest before serving this zesty delight.
