For The Pasta Dough:
- 2 cup All-Purpose Flour Plus Extra For Dusting
- 3 Eggs Large
- 1/2 tsp Salt
For The Filling:
- 1 cup Ricotta Cheese
- 1/2 cup Grated Parmesan Cheese
- 1/2 cup Fresh Spinach Chopped, (Optional)
- 1 Garlic Cloves Minced
- 1/2 tsp Dried Basil
- Salt To Taste
- Pepper To Taste
For The Sauce:
- 2 tbsp Unsalted Butter
- 2 Garlic Cloves Minced
- 1/4 cup Fresh Basil Leaves Chopped
- Grated Parmesan Cheese For Garnish
- Salt To Taste
- Pepper To Taste

Instructions
- In a mixing bowl, combine the flour and salt for the pasta dough. Create a well in the center and crack the eggs into the well. Gently beat the eggs with a fork and gradually incorporate the flour until a dough forms.
- Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes.
- Meanwhile, prepare the filling by combining the ricotta cheese, grated Parmesan cheese, chopped spinach, minced garlic, dried basil, salt, and pepper in a bowl. Mix well until thoroughly combined.
- Divide the pasta dough into 2 portions. Roll out one portion of the dough into a thin sheet using a rolling pin or pasta machine. If using a ravioli mold, place the dough sheet over the mold and gently press it into the pockets. Spoon the filling into each pocket. If not using a mold, place small spoonfuls of filling onto the dough, leaving space between each portion.
- Roll out the second portion of dough into a thin sheet and carefully place it over the filled dough sheet. Gently press down around the filling to seal the ravioli.
- Use a pasta cutter or sharp knife to cut the ravioli into individual pieces. Ensure the edges are well-sealed to prevent filling leakage during cooking.
- Bring a large pot of salted water to a boil. Carefully add the ravioli to the boiling water and cook for 5-7 minutes, or until they float to the surface. Be cautious not to overcrowd the pot, and cook them in batches if necessary.
- While the ravioli are cooking, prepare the sauce. In a separate pan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Stir in the chopped fresh basil and season with salt and pepper to taste.
