Ingredients
For The Sauce:
- 1/4 cup Creamy Peanut Butter
- 2 tbsp Soy Sauce
- 2 tbsp Rice Vinegar
- 1 tbsp Honey
- 1 tbsp Sriracha Sauce
- 1 tbsp Sesame Oil
For The Noodles:
- 6 oz Noodles (Soba Or Spaghetti)
- 8 oz Firm Tofu Pressed And Cubed
- 1 Red Bell Pepper Sliced
- 1/2 cup Carrots Shredded
- 1/2 cup Green Onions Chopped
- 2 tbsp Cilantro Chopped
- 2 tbsp Peanuts Chopped
Instructions
- Cook the noodles according to the package instructions until al dente. Drain and set aside.
- In a mixing bowl, whisk together all the sauce ingredients until smooth.
- In a large non-stick pan, heat 1 tablespoon of oil over medium-high heat.
- Add the cubed tofu and cook for 3-4 minutes on each side, until golden brown.
- Remove the tofu from the pan and set aside.
- In the same pan, add the sliced bell pepper and shredded carrots. Cook for 3-4 minutes until slightly tender.
- Add the cooked noodles and the peanut sauce to the pan. Toss everything together until well coated.
- Add the cooked tofu back to the pan and toss again.
- Serve the noodles with chopped green onions, cilantro, and chopped peanuts on top.
