  • Cook the noodles according to the package instructions until al dente. Drain and set aside.
  • In a mixing bowl, whisk together all the sauce ingredients until smooth.
  • In a large non-stick pan, heat 1 tablespoon of oil over medium-high heat.
  • Add the cubed tofu and cook for 3-4 minutes on each side, until golden brown.
  • Remove the tofu from the pan and set aside.
  • In the same pan, add the sliced bell pepper and shredded carrots. Cook for 3-4 minutes until slightly tender.
  • Add the cooked noodles and the peanut sauce to the pan. Toss everything together until well coated.
  • Add the cooked tofu back to the pan and toss again.
  • Serve the noodles with chopped green onions, cilantro, and chopped peanuts on top.
