Instructions
Cook the noodles according to the package instructions until al dente. Drain and set aside.
In a mixing bowl, whisk together all the sauce ingredients until smooth.
In a large non-stick pan, heat 1 tablespoon of oil over medium-high heat.
Add the cubed tofu and cook for 3-4 minutes on each side, until golden brown.
Remove the tofu from the pan and set aside.
In the same pan, add the sliced bell pepper and shredded carrots. Cook for 3-4 minutes until slightly tender.
Add the cooked noodles and the peanut sauce to the pan. Toss everything together until well coated.
Add the cooked tofu back to the pan and toss again.
Serve the noodles with chopped green onions, cilantro, and chopped peanuts on top.
