Instructions
Preheat the oven to 375°F.
Cook lasagna noodles according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium-high heat.
Add diced onion and minced garlic to the skillet and cook until fragrant and translucent, about 3-4 minutes.
Add crushed tomatoes, tomato paste, dried oregano, salt, and pepper to the skillet. Stir well to combine and let the sauce simmer for 10-15 minutes.
In a mixing bowl, combine ricotta cheese and 1 cup of shredded mozzarella cheese.
In another mixing bowl, combine mixed vegetables and remaining shredded mozzarella cheese.
In a 9x13 inch baking dish, spread a layer of tomato sauce on the bottom.
Add a layer of cooked lasagna noodles on top of the tomato sauce.
Add a layer of the ricotta cheese mixture on top of the lasagna noodles.
Add another layer of cooked lasagna noodles on top of the ricotta cheese mixture.
Add a layer of the mixed vegetable and mozzarella cheese mixture on top of the lasagna noodles.
Repeat layers of tomato sauce, lasagna noodles, ricotta cheese mixture, and mixed vegetables until all ingredients are used.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Garnish with chopped parsley leaves if desired and serve hot.
