Instructions
Melt the butter in a large pot or Dutch oven over medium heat.
Add the chopped onion and minced garlic and cook for 2-3 minutes until soft.
Add the diced potatoes to the pot and cook for another 5 minutes, stirring occasionally.
Pour in the chicken or vegetable broth, add the dried thyme and bay leaf, and bring to a boil.
Reduce the heat to low and simmer for 10-15 minutes until the potatoes are tender.
Add the salmon to the pot and cook for an additional 5-7 minutes until the salmon is cooked through.
Remove the bay leaf and stir in the whole milk and heavy cream.
Season with salt and pepper to taste.
Serve hot, garnished with chopped fresh parsley if desired.
