Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
In a saucepan, combine water, milk, butter, sugar and salt over medium heat. Stir until the butter melts and the mixture comes to a simmer.
Remove the saucepan from heat and add all the flour at once. Stir vigorously with a wooden spoon until the mixture forms a smooth dough.
Return the saucepan to low heat and continue stirring for 1-2 minutes to dry out the dough slightly.
Transfer the dough to a mixing bowl and let it cool for a few minutes. Add the eggs one at a time, beating well after each addition, until the dough becomes smooth and shiny.
Drop spoonful's of the dough onto the prepared baking sheet, leaving space between them. You can also use a piping bag to create neater shapes.
Bake in the preheated oven for 25-30 minutes or until the Profiteroles are golden brown and puffed.
While the Profiteroles cool, prepare the whipped cream filling by beating the heavy cream, powdered sugar and vanilla extract until soft peaks form.
Once the Profiteroles have cooled completely, slice them in half and fill each one generously with whipped cream.
For the chocolate sauce, heat the heavy cream in a small saucepan until it simmers. Remove from heat and add the dark chocolate, stirring until smooth.
Drizzle the chocolate sauce over the filled Profiteroles and serve immediately.
