Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out the puff pastry sheet on a lightly floured surface to smooth it out. Cut it into three equal rectangles and place them on the prepared baking sheet. Prick the pastry with a fork to prevent excessive puffing.
Bake the puff pastry for about 15 minutes or until golden brown and puffed. Remove from the oven and let it cool completely.
For the pastry cream, heat the milk in a saucepan until it starts to steam.
In a separate bowl, whisk together the egg yolks, granulated sugar, cornstarch and vanilla extract until smooth.
Slowly pour the hot milk into the egg mixture while whisking continuously. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens into a smooth custard. Remove from heat and let it cool.
For the glaze, whisk together the powdered sugar, milk, and vanilla extract until you achieve a smooth, pourable consistency.
To assemble, place one puff pastry rectangle on a serving plate. Spread a layer of pastry cream on top, and then add the second pastry rectangle. Repeat the process with more pastry cream and finish with the third pastry rectangle.
Drizzle the glaze over the top layer of the Mille-Feuille and use an offset spatula to spread it evenly.
Chill the Mille-Feuille in the refrigerator for at least 2 hours before serving to allow the flavors to meld together.
