Instructions
Preheat your oven to 350°F (180°C). Grease an 8x8 inch baking dish with cooking spray.
In a mixing bowl, whisk together the flour and sugar for the crust. Add the softened butter and mix until the dough comes together.
Press the dough evenly into the prepared baking dish. Bake for 15 minutes or until lightly golden brown.
In a separate mixing bowl, whisk together the eggs and sugar until light and fluffy.
Add the flour, baking powder, salt, lemon zest, and lemon juice, and mix until well combined.
Gently fold in the blueberries into the filling mixture.
Pour the filling over the pre-baked crust and bake for an additional 25-30 minutes or until the filling is set and the edges are lightly golden brown.
Allow the lemon-blueberry bars to cool completely before slicing into 4 equal portions and serving.
