In a food processor or blender, combine the chickpeas, tahini, lemon juice, garlic, cumin, and salt. Pulse the mixture until it's well blended and creamy.
Gradually add the olive oil while the food processor or blender is still running, until the hummus is smooth and silky.
Transfer the hummus to a mixing bowl and taste for seasoning. Adjust the salt and lemon juice as needed.
To serve, transfer the hummus to a serving dish and drizzle with a little extra olive oil. Garnish with paprika and parsley.
