Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, combine the warm water and honey. Sprinkle the yeast over the mixture and let it sit for about 5 minutes, or until foamy.
In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
Stir the ingredients together until a dough forms. Transfer the dough to a lightly floured surface and knead for about 5-7 minutes, or until smooth and elastic.
Place the dough back into the mixing bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
Divide the dough into 4 equal portions. Roll each portion into a long rope, about 1/2 inch thick.
Shape each rope into a ring by connecting the ends and pressing them together gently. Place the rings on the prepared baking sheet.
In a small bowl, pour the sesame seeds. Brush the top of each Koulouri ring with water, then dip it into the sesame seeds, pressing gently to adhere.
Let the Koulouri rings rest for an additional 30 minutes.
Bake in the preheated oven for 18-20 minutes, or until golden brown and crispy.
Remove from the oven and let them cool on a wire rack before serving.
