Instructions
In a large pot, bring water to a boil.
Add rinsed red lentils to the pot and let simmer for 20-25 minutes, or until the lentils are tender.
In a skillet, heat vegetable oil over medium-high heat.
Add diced onion and minced garlic to the skillet and cook until fragrant and translucent, about 3-4 minutes.
Add ground cumin, ground coriander, turmeric, cayenne pepper, and salt to the skillet. Stir well to combine.
Add the onion and spice mixture to the pot with the cooked lentils. Stir well to combine.
If desired, use an immersion blender or transfer the mixture to a blender and blend until smooth.
Add lemon juice to the pot and stir well.
Serve hot, garnished with chopped cilantro leaves if desired.
