Instructions
In a mixing bowl, combine the flour, baking powder, salt, and sugar. Whisk together until well combined.
In a separate bowl, beat the eggs until light and frothy.
Add the milk and melted butter and mix well.
Pour the egg mixture into the dry ingredients and mix until well combined. The dough should be soft and sticky.
Heat the vegetable oil in a deep fryer or pot to 375°F (190°C).
Use a tablespoon or cookie scoop to drop balls of dough into the hot oil, frying in batches of 4-5 at a time.
Fry until golden brown on all sides, turning occasionally with a slotted spoon or spider strainer.
Remove the fried fank with a slotted spoon or spider strainer and transfer to a plate lined with paper towels to drain excess oil.
Dust the warm fank with powdered sugar and serve immediately.
Enjoy it with jam of your choice if you fancy!
