Preheat the oven to 350°F. Grease and flour 2 (8-inch) cake pans.
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another mixing bowl, beat the vegetable oil, butter, and eggs until smooth.
Add the cocoa powder, red food coloring, and vanilla extract and mix until well combined.
Add half of the flour mixture to the egg mixture and mix until just combined.
Then add the buttermilk and mix until well combined.
Finally, add the remaining flour mixture and mix until just combined.
Divide the batter evenly between the two prepared cake pans.
Bake for 25-30 minutes or until a toothpick inserted in the center of the cake comes out clean.
Remove the cakes from the oven and let them cool in the pans for 10 minutes.
Then, remove the cakes from the pans and transfer them to a cooling rack to cool completely.
To make the cream cheese frosting, beat together the cream cheese and butter until smooth.
Add the powdered sugar and vanilla extract and mix until well combined.
Once the cakes are cooled, spread the cream cheese frosting on top of one of the cakes.
Place the other cake on top of the frosting.
Frost the top and sides of the cake (optional, you can leave the sides naked too if you choose to do so) with the remaining frosting using an offset spatula.
