For The Crust:

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  • Press the mixture into the bottom and up the sides of a 9-inch pie dish. Use a flat-bottomed measuring cup to press the crumbs firmly into the dish.
  • Bake the crust for 10 minutes, or until lightly browned. Remove from the oven and let cool.

For The Filling:

  • In a separate mixing bowl, beat the egg yolks with an electric mixer until light and fluffy.
  • Gradually add the sweetened condensed milk while continuing to beat the mixture.
  • Add the lime juice and lime zest, and mix until well combined.

For the pie:

  • Pour the filling mixture into the cooled crust.
  • Bake the pie for 15 minutes, or until the filling is set.
  • Remove from the oven and let cool to room temperature.
  • Top the cooled pie with the whipped cream, and garnish with additional lime zest, if desired.
  • Chill the pie in the refrigerator for at least 2 hours before serving.

  • To make the whipped cream topping, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form.
