For The Filling:

24 oz Cream Cheese Room Temperature
1 cup Granulated Sugar
3 Eggs Large
1 tsp Vanilla Extract
1/4 cup Heavy Cream

For The Crust:

1 1/2 cup Graham Cracker Crumbs
1/4 cup Granulated Sugar
1/3 cup Unsalted Butter Melted

Instructions

For the crust:

Preheat the oven to 350°F.
Grease a 9-inch springform pan with non-stick cooking spray.
Press the crumb mixture into the bottom of the prepared springform pan up to the sides, using the back of a spoon to create an even layer.
In a mixing bowl, stir together the graham cracker crumbs, granulated sugar, and melted butter until well combined.
Bake the crust for 10 minutes or until golden brown.
Remove the pan from the oven and let it cool while you prepare the filling.

For the filling:

In a mixing bowl, beat the cream cheese and granulated sugar with an electric mixer until smooth.
Add the eggs, one at a time, and beat until well combined.
Add the vanilla extract and heavy cream and beat until the mixture is smooth and creamy.
Pour the filling over the cooled crust.
Cover the bottom and sides of the springform pan with aluminum foil to prevent water from getting in.
Place the springform pan in a large roasting pan and pour hot water into the roasting pan, filling it about 1 inch high.
Bake the cheesecake for 45 minutes or until the edges are set and the center is slightly jiggly.
Turn off the oven and let the cheesecake cool in the oven for 30 minutes.
Remove the cheesecake from the roasting pan and let it cool completely before removing it from the springform pan.
Serve the cheesecake chilled.
