Instructions
In a mixing bowl, combine the ground pork, cabbage, carrots, green onions, garlic, and soy sauce.
In a small bowl, mix together the cornstarch and water to make a slurry.
Lay an egg roll wrapper on a flat surface with a corner pointing towards you.
Spoon 2-3 tbsp of the pork mixture onto the center of the wrapper.
Use a fork to spread the slurry around the edges of the wrapper.
Fold the corner closest to you over the filling, tucking it in tightly.
Fold in the left and right corners, then roll the wrapper tightly away from you.
Repeat with the remaining egg roll wrappers and filling.
Preheat the air fryer to 375°F.
Spray the egg rolls with cooking spray, making sure they are coated evenly.
Place the egg rolls in the air fryer basket, making sure they do not touch.
Cook for 15-20 minutes, flipping halfway through, until they are golden brown and crispy.
Serve hot with sweet chili sauce for dipping.
