Instructions
For the shells:
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, salt, and cinnamon.
Use a pastry cutter or your fingers to cut the butter into the flour mixture until it's crumbly.
Add the egg yolk and white wine to the mixing bowl and stir until the dough comes together.
Turn the dough out onto a floured surface and knead it for a few minutes.
Roll the dough out to a thickness of 1/8 inch.
Use a cookie cutter or a small bowl to cut the dough into circles.
Roll each circle of dough around a cannoli form, sealing the edges with a little bit of water.
Heat the vegetable oil in a deep fryer or large pot to 350°F.
Carefully place the dough forms into the hot oil and fry for 1-2 minutes on each side or until they're golden brown.
Remove the shells from the oil using a slotted spoon or spider strainer and place them on a paper towel-lined plate to drain excess oil.
Let the shells cool completely before filling.
For the filling:
In a mixing bowl, beat the ricotta cheese, powdered sugar, and vanilla extract with an electric mixer until smooth.
Fold in the mini chocolate chips.
Place the filling in a pastry bag fitted with a star-shaped pastry tip.
Carefully pipe the filling into the cooled cannoli shells from both ends.
Dust the cannoli with powdered sugar before serving.
Notes
Serve these cannoli with a cup of espresso or cappuccino for an authentic Italian experience. Enjoy!
