2 tbsp Vegetable Oil
1 Onion Diced
1 Green Bell Pepper Diced
1 Red Bell Pepper Diced
2 Garlic Cloves Minced
1 tsp Cajun Seasoning
1/2 tsp Paprika
1/4 tsp Cayenne Pepper (Adjust To Taste)
Salt To Taste
Pepper To Taste

For Garnish:

2 Green Onions Sliced
Fresh Parsley Chopped

Instructions

Using a sharp knife, carefully cut the kernels off the corn cobs. Set aside.
Heat the vegetable oil in a large skillet or sauté pan over medium heat.
Add the diced onion, green bell pepper, and red bell pepper to the skillet. Sauté for about 5 minutes until the vegetables are softened.
Stir in the minced garlic, Cajun seasoning, paprika, cayenne pepper, salt, and pepper. Cook for an additional minute until fragrant.
Add the corn kernels to the skillet and stir well to combine with the spices and vegetables.
Reduce the heat to low, cover the skillet, and let the Maque Choux simmer for about 10-12 minutes, stirring occasionally, until the corn is tender.
Taste and adjust the seasoning if needed.
Remove from heat and garnish with sliced green onions and chopped fresh parsley.
