Instructions
Preheat the oven to 400°F.
Line a baking sheet with parchment paper.
Divide the ice cream into four small bowls or ramekins and freeze for at least 30 minutes.
In a large mixing bowl, sift together the cake flour, baking powder, and salt.
In a separate mixing bowl, cream together the butter and granulated sugar until light and fluffy.
Add the egg yolks and vanilla extract to the butter mixture and beat until well combined.
Gradually add the flour mixture to the butter mixture and beat until just combined.
In a separate mixing bowl, beat the egg whites with an electric mixer until they start to foam.
Add the cream of tartar to the egg whites and continue to beat until stiff peaks form.
Gradually add the 2 tablespoons of granulated sugar to the egg white mixture and beat until the mixture is glossy and stiff peaks form.
Fold the egg white mixture into the cake batter with a spatula.
Remove the ice cream bowls from the freezer and invert them onto the prepared baking sheet.
Spoon the cake batter over the ice cream, covering it completely.
Use a spatula to smooth the cake batter over the ice cream and make sure there are no gaps.
Bake for 8-10 minutes, or until the meringue is golden brown.
Remove from the oven and serve immediately.
Notes
