Start by lighting your grill and letting the coals burn down until they are glowing red.
Season the meat generously with salt, making sure to cover both sides.
Place the meat on the grill, starting with the short ribs, as they will take the longest to cook. Cook the ribs for 45 minutes to 1 hour on each side, until they are well browned and crispy.
Next, add the flank steak to the grill, cooking for 15-20 minutes on each side, until it is medium-rare.
While the meat is cooking, add the sliced peppers and onions to the grill, cooking them until they are charred and soft.
Lastly, add the chorizos to the grill, cooking for 10-15 minutes until they are fully cooked.
Once everything is cooked, let the meat rest for a few minutes on a cutting board, then slice it thinly against the grain.
Serve with chimichurri sauce and a drizzle of olive oil.
Notes
Slow Cooker Instructions (Optional):If you don't have a grill, you can still make an authentic Asado in a slow cooker. Simply season the meat as directed above and place it in the slow cooker with sliced onions and peppers. Cook on low for 8-10 hours, until the meat is tender and falling off the bone. Serve with chimichurri sauce and a drizzle of olive oil.
