Instructions
Preheat the air fryer to 400°F.
In a mixing bowl, whisk together the flour, salt, and black pepper.
In a separate bowl, beat the eggs.
In another bowl, mix together the panko breadcrumbs and shredded coconut.
Dip the shrimp in the flour mixture, then into the beaten eggs, and finally coat with the panko and coconut mixture.
Place the coated shrimp into the air fryer basket and spray with cooking spray.
Cook for 8-10 minutes, flipping the shrimp halfway through, until they are golden brown and crispy.
Serve hot with sweet chili sauce for dipping.
