- 1 lb Boneless, Skinless Chicken Thighs Cut Into Bite-Sized Pieces
- 1/4 cup Coconut Milk
- 2 tbsp Red Curry Paste
- 1 tbsp Fish Sauce
- 1 tbsp Soy Sauce
- 1 tbsp Brown Sugar
- 1/2 tsp Ground Cumin
- 1/2 tsp Ground Coriander
- 1/4 tsp Turmeric Powder
- Spicy Peanut Sauce For Serving
Instructions
- In a mixing bowl, whisk together the coconut milk, red curry paste, fish sauce, soy sauce, brown sugar, cumin, coriander, and turmeric powder until well combined.
- Add the chicken pieces to the bowl and toss to coat with the marinade. Cover and refrigerate for at least 1 hour, or up to overnight.
- Preheat a grill or grill pan to medium-high heat.
- Thread the chicken pieces onto the soaked bamboo skewers.
- Grill the chicken skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
- Serve the Satay immediately with the spicy peanut sauce on the side.
