Ingredients
- 8 oz Tempeh Sliced Into Thin Strips
- 1/4 cup Apple Cider Vinegar
- 1/4 cup Water
- 1 tbsp Soy Sauce
- 1 tbsp Olive Oil
- 4 Slices Rye Bread
- 1/4 cup Sauerkraut
- 2 Slices Swiss Cheese
- Thousand Island Dressing
Instructions
- In a shallow dish, whisk together the apple cider vinegar, water, and soy sauce.
- Add the tempeh strips to the marinade and let them sit for at least 10 minutes.
- Heat the olive oil in a medium-sized frying pan over medium-high heat.
- Add the marinated tempeh strips to the pan and cook for 3-4 minutes on each side, or until golden brown.
- Toast the slices of rye bread in a toaster or in the oven.
- To assemble the sandwiches, spread thousand island dressing on one side of each slice of toasted bread.
- Top two slices of the bread with the cooked tempeh strips, sauerkraut, and Swiss cheese.
- Place the remaining slices of bread on top to form sandwiches.
- Heat a pan over medium heat and cook the sandwiches until the cheese is melted and the bread is crispy, flipping halfway through, about 3-4 minutes per side.
- Cut the sandwiches in half and serve hot.
