For The Rice:
- 2 cup Basmati Rice
- 2 cup Greek Yogurt
- 2 Eggs Large
- 1/4 cup Melted Butter
- 1/2 tsp Ground Saffron (Dissolved In 2 Tablespoons Hot Water)
- Salt To Taste
- Pepper To Taste
For The Chicken Or Lamb Layer:
- 1 pound Boneless Chicken Breast Cooked And Shredded, Or
- Lamb
- 1 tsp Ground Turmeric
- 1/2 tsp Ground Cinnamon
- Salt To Taste
- Pepper To Taste
For Serving (Sprinkled On Top):
- Barberries
- Chopped Herbs
- Saffron Threads
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in cold water for 1 hour, then drain.
- In a large mixing bowl, combine the soaked and drained rice, Greek yogurt, eggs, melted butter, dissolved saffron, salt, and pepper. Mix well to ensure all ingredients are evenly combined.
- In a separate saucepan, cook the chicken or lamb with turmeric, cinnamon, salt, and pepper until fully cooked and tender. Shred the meat using two forks.
- Preheat the oven to 350°F (175°C).
- Grease the round baking dish with butter or oil. Spread a thin layer of rice mixture on the bottom of the dish.
- Add a layer of shredded chicken or lamb on top of the rice.
- Continue layering with alternating rice and meat until all ingredients are used, ending with a layer of rice on top.
- Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 1 hour or until the rice is fully cooked and forms a crispy golden crust.
- Remove from the oven and let it cool for a few minutes.
- Invert the baking dish onto a serving platter, gently tapping to release the Tahchin.
- Slice and serve the Tahchin warm, garnished with saffron threads, chopped herbs or barberries, if desired.
