  • Rinse the basmati rice under cold water until the water runs clear. Soak the rice in cold water for 1 hour, then drain.
  • In a large mixing bowl, combine the soaked and drained rice, Greek yogurt, eggs, melted butter, dissolved saffron, salt, and pepper. Mix well to ensure all ingredients are evenly combined.
  • In a separate saucepan, cook the chicken or lamb with turmeric, cinnamon, salt, and pepper until fully cooked and tender. Shred the meat using two forks.
  • Preheat the oven to 350°F (175°C).
  • Grease the round baking dish with butter or oil. Spread a thin layer of rice mixture on the bottom of the dish.
  • Add a layer of shredded chicken or lamb on top of the rice.
  • Continue layering with alternating rice and meat until all ingredients are used, ending with a layer of rice on top.
  • Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 1 hour or until the rice is fully cooked and forms a crispy golden crust.
  • Remove from the oven and let it cool for a few minutes.
  • Invert the baking dish onto a serving platter, gently tapping to release the Tahchin.
  • Slice and serve the Tahchin warm, garnished with saffron threads, chopped herbs or barberries, if desired.
