Ingredients
- 4 Veal Cutlets (Approximately 4-6 Ounces Each)
- 4 slices Prosciutto
- 8 Sage Leaves Fresh
- All-Purpose Flour For Dredging
- 2 tbsp Butter
- 2 tbsp Olive Oil
- 1/2 cup Dry White Wine
- Salt To Taste
- Pepper To Taste
Instructions
- Place a veal cutlet between two sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound the cutlet until it becomes about 1/4 inch thick. Repeat with the remaining cutlets.
- Season each veal cutlet with salt and pepper. Place a slice of prosciutto on top of each cutlet, followed by two fresh sage leaves.
- Roll up each cutlet tightly and secure with skewers or toothpicks to hold the roll in place.
- Dredge each rolled veal cutlet in flour, shaking off any excess.
- In a large skillet, heat the butter and olive oil over medium heat. Once the butter has melted and the oil is hot, add the veal rolls to the skillet.
- Cook the Saltimbocca for about 3-4 minutes per side, or until golden brown and cooked through. Use tongs to carefully turn the rolls.
- Remove the Saltimbocca from the skillet and transfer them to a plate. Tent the plate with foil to keep them warm.
- Pour the white wine into the skillet, scraping the bottom to loosen any browned bits. Cook for about 2 minutes, or until the wine has slightly reduced.
- Return the Saltimbocca to the skillet and spoon the wine sauce over them.
