  • Once roasted, remove the vegetables from the oven, and allow them to cool slightly. Then, peel the skin off the red peppers and tomatoes, and remove any seeds or stems.
  • In a food processor or blender, combine the roasted red peppers, tomatoes, blanched almonds, red wine vinegar, smoked paprika, and red pepper flakes.
  • While blending, slowly drizzle in the extra-virgin olive oil to create a smooth and creamy consistency.
  • Season with salt and pepper to taste, and blend once more to fully incorporate the flavors.
