  • Turn on the instant pot and select the sauté function. Add the vegetable oil to the pot.
  • Season the pork shoulder with salt and pepper and place it in the pot. Sear on all sides until browned.
  • In a small bowl, combine the chicken broth, barbecue sauce, brown sugar, chili powder, smoked paprika, and garlic powder.
  • Pour the mixture over the pork shoulder in the instant pot.
  • Lock the lid in place and set the instant pot to cook on high pressure for 90 minutes.
  • Once the timer goes off, allow the pressure to release naturally for 15 minutes, then carefully use the quick-release valve to release any remaining pressure.
  • Remove the pork shoulder from the instant pot using tongs and transfer it to a cutting board.
  • Use two forks to shred the pork shoulder into bite-sized pieces.
  • Serve the pulled pork with your favorite sides like coleslaw, baked beans, or cornbread.
