- 2 cup Coconut Milk
- 1/2 cup Granulated Sugar
- 1/2 cup Cornstarch
- 1/4 tsp Ground Cinnamon
- 1/4 tsp Ground Nutmeg
- 1/4 tsp Salt
- Unsweetened Coconut Flakes For Topping, Toasted (Optional)
Instructions
- In a saucepan, whisk together the coconut milk, granulated sugar, cornstarch, ground cinnamon, ground nutmeg, and salt.
- Heat the mixture over medium heat, whisking constantly, until it thickens and comes to a boil.
- Reduce heat to low and simmer for an additional 2-3 minutes, whisking constantly, until the mixture is thick and smooth.
- Remove the saucepan from heat and pour the mixture into a mixing bowl.
- Let the Tembleque cool to room temperature, then cover with plastic wrap and chill in the refrigerator for at least 2 hours, or until firm.
- When ready to serve, spoon the Tembleque into individual serving dishes.
- Sprinkle with toasted coconut flakes, if desired.
- Serve and enjoy!
