- 4 Slices Bacon Chopped
- 1 Onion Chopped
- 2 Celery Stalks Chopped
- 3 Garlic Cloves Minced
- 4 cups Chicken Broth
- 2 cups Milk
- 1 cup Heavy Cream
- 4 cups Potatoes Peeled And Diced
- 2 cans Chopped Clams Drained (6.5 Oz Each)
- 1/4 tsp Dried Thyme
- Salt & Pepper To Taste
- Parsley Chopped, For Garnish
Instructions
- In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.
- Add the onion and celery to the pot and cook, stirring occasionally, until the vegetables are soft, about 10 minutes.
- Add the garlic to the pot and cook for an additional 1-2 minutes, until fragrant.
- Pour in the chicken broth, milk, and heavy cream. Add the potatoes, clams, thyme, salt, and pepper, and stir to combine.
- Bring the mixture to a simmer and cook for 20-25 minutes, or until the potatoes are tender and the chowder has thickened.
- Serve the clam chowder in bowls and garnish with chopped bacon and parsley.
