  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out the puff pastry sheet on a lightly floured surface to smooth it out. Cut it into three equal rectangles and place them on the prepared baking sheet. Prick the pastry with a fork to prevent excessive puffing.
  • Bake the puff pastry for about 15 minutes or until golden brown and puffed. Remove from the oven and let it cool completely.
  • For the pastry cream, heat the milk in a saucepan until it starts to steam.
  • In a separate bowl, whisk together the egg yolks, granulated sugar, cornstarch and vanilla extract until smooth.
  • Slowly pour the hot milk into the egg mixture while whisking continuously. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens into a smooth custard. Remove from heat and let it cool.
  • For the glaze, whisk together the powdered sugar, milk, and vanilla extract until you achieve a smooth, pourable consistency.
  • To assemble, place one puff pastry rectangle on a serving plate. Spread a layer of pastry cream on top, and then add the second pastry rectangle. Repeat the process with more pastry cream and finish with the third pastry rectangle.
  • Drizzle the glaze over the top layer of the Mille-Feuille and use an offset spatula to spread it evenly.
  • Chill the Mille-Feuille in the refrigerator for at least 2 hours before serving to allow the flavors to meld together.
