Ingredients
- 1 cup Bulgur Wheat
- 2 cups Parsley Finely Chopped
- 1/2 cup Mint Leaves Finely Chopped
- cup Green Onions Finely Chopped
- 1 cup Tomatoes Diced
- 1/2 cup Lemon Juice Fresh
- 1/2 cup Olive Oil
- Salt & Pepper To Taste
Instructions
- Rinse the bulgur wheat in cold water and drain well.
- Place the bulgur wheat in a large mixing bowl and add enough cold water to cover the wheat by about an inch.
- Let it soak for about 20 minutes, or until the wheat is tender.
- Drain any excess water and fluff the bulgur wheat with a fork.
- Add the chopped parsley, mint, green onions, and diced tomatoes to the bowl with the bulgur wheat.
- In a small mixing bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss well to combine.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving.
- Serve chilled and enjoy!
