  • In a large pot of boiling water, cook the lobster tails for about 8-10 minutes until the shells turn bright red. Remove the lobster tails from the pot and let them cool. Once cooled, remove the meat from the shells and chop into bite-sized pieces.
  • In a medium-sized bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, chopped chives, salt, and pepper until well combined. This is your lobster dressing.
  • Add the chopped lobster meat to a large mixing bowl and pour the lobster dressing over it. Gently toss until the lobster meat is evenly coated.
  • Preheat a grill or skillet over medium heat. Brush the insides of the split-top hot dog buns with melted butter. Toast the buns on the grill or skillet until golden and crisp, about 2 minutes per side.
  • To assemble the Lobster Rolls, place lettuce leaves on the bottom of each toasted bun. Spoon the lobster mixture onto the lettuce and close the buns.
