- 1 cup Dried Lentils Green Or Brown, Rinsed & Drained
- 1 tbsp Olive Oil
- 1 Onion Diced
- 2 Carrots Diced
- 2 Celery Stalks Diced
- 3 Garlic Cloves Minced
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1/2 tsp Turmeric
- 1/2 tsp Paprika
- 4 cup Vegetable Broth
- 2 cup Water
- 1 Bay Leaf
- Salt To Taste
- Pepper To Taste
- Fresh Parsley Or Cilantro, Chopped, For Garnish
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
