  • Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, about 8-10 minutes.
  • While the pasta is cooking, cook the pancetta or bacon in a large skillet over medium heat until crispy. Add the minced garlic and cook for 1-2 minutes more.
  • In a mixing bowl, whisk together the egg yolks and Parmesan cheese until well combined.
  • Once the spaghetti is cooked, use a pasta server to transfer it to the skillet with the pancetta or bacon. Reserve a cup of the pasta water.
  • Remove the skillet from the heat and pour the egg and cheese mixture over the spaghetti.
  • Quickly toss the spaghetti until it is evenly coated with the egg mixture.
  • If it seems dry, add some of the reserved pasta water, a little at a time, until it reaches your desired consistency.
  • Season with salt and pepper to taste.
