  • Preheat your oven to 425°F.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add the cubed butter to the bowl and use a pastry cutter or two knives to cut the butter into the flour mixture until it resembles coarse crumbs.
  • In a small bowl, whisk together the milk and egg.
  • Add the mixture to the flour mixture and stir until just combined.
  • Drop the dough onto a baking sheet lined with parchment paper, making 4 even portions.
  • Bake for 15-20 minutes, or until the shortcakes are lightly golden brown.
  • In a separate mixing bowl, whip the heavy cream with an electric mixer until soft peaks form.
  • Add the powdered sugar and vanilla extract and continue whipping until stiff peaks form.
  • To assemble the shortcakes, split each one in half and top with sliced strawberries and whipped cream.
  • Place the top half of the shortcake on top and add another dollop of whipped cream and a few more strawberries.
