For The Cake:
- 1 1/2 cup All-Purpose Flour
- 1 cup Granulated Sugar
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/3 cup Vegetable Oil
- 1/4 cup Unsalted Butter Softened
- 2 Eggs Large
- 1 tbsp Unsweetened Cocoa Powder
- 1 tbsp Red Food Coloring
- 1 tsp Vanilla Extract
- 1/2 cup Buttermilk
For The Cream Cheese Frosting:
- 4 oz Cream Cheese Softened
- 1/4 cup Unsalted Butter Softened
- 2 cup Powdered Sugar
- 1 tsp Vanilla Extract
Instructions
- Preheat the oven to 350°F. Grease and flour 2 (8-inch) cake pans.
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another mixing bowl, beat the vegetable oil, butter, and eggs until smooth.
- Add the cocoa powder, red food coloring, and vanilla extract and mix until well combined.
- Add half of the flour mixture to the egg mixture and mix until just combined.
- Then add the buttermilk and mix until well combined.
- Finally, add the remaining flour mixture and mix until just combined.
- Divide the batter evenly between the two prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Remove the cakes from the oven and let them cool in the pans for 10 minutes.
- Then, remove the cakes from the pans and transfer them to a cooling rack to cool completely.
- To make the cream cheese frosting, beat together the cream cheese and butter until smooth.
- Add the powdered sugar and vanilla extract and mix until well combined.
- Once the cakes are cooled, spread the cream cheese frosting on top of one of the cakes.
- Place the other cake on top of the frosting.
- Frost the top and sides of the cake (optional, you can leave the sides naked too if you choose to do so) with the remaining frosting using an offset spatula.
- Slice and serve!
