For The Crust:

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the flour, powdered sugar, and softened butter. Mix until well combined.
  • Press the mixture into the bottom of an 8x8 inch baking dish. Use a flat-bottomed measuring cup to press the mixture firmly into the dish.
  • Bake the crust for 20 minutes, or until lightly browned. Remove from the oven and let cool.

For The Filling:

  • In a separate mixing bowl, beat the eggs with an electric mixer until light and fluffy.
  • Gradually add the granulated sugar while continuing to beat the mixture.
  • Add the lemon juice and lemon zest, and mix until well combined.
  • In a small bowl, whisk together the flour, baking powder, and salt. Add the mixture to the egg mixture and stir until well combined.

For The Bar:

  • Pour the mixture over the cooled crust.
  • Bake the Lemon Bars for 20-25 minutes, or until the filling is set. Remove from the oven and let cool to room temperature.
  • Dust the top of the bars with powdered sugar.
  • Cut the bars into squares and serve.
