Ingredients
- 1 cup Red Lentils Rinsed And Drained
- 4 cups Water
- 1 tbsp Vegetable Oil
- 1 Onion Diced
- 2 Garlic Cloves Minced
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1/2 tsp Turmeric
- 1/4 tsp Cayenne Pepper
- 1 tbsp Lemon Juice
- Salt To Taste
- Cilantro Leaves Chopped; (Optional)
Instructions
- In a large pot, bring water to a boil.
- Add rinsed red lentils to the pot and let simmer for 20-25 minutes, or until the lentils are tender.
- In a skillet, heat vegetable oil over medium-high heat.
- Add diced onion and minced garlic to the skillet and cook until fragrant and translucent, about 3-4 minutes.
- Add ground cumin, ground coriander, turmeric, cayenne pepper, and salt to the skillet. Stir well to combine.
- Add the onion and spice mixture to the pot with the cooked lentils. Stir well to combine.
- If desired, use an immersion blender or transfer the mixture to a blender and blend until smooth.
- Add lemon juice to the pot and stir well.
- Serve hot, garnished with chopped cilantro leaves if desired.
