Ingredients
For The Filling:
- 24 oz Cream Cheese Room Temperature
- 1 cup Granulated Sugar
- 3 Eggs Large
- 1 tsp Vanilla Extract
- 1/4 cup Heavy Cream
For The Crust:
- 1 1/2 cup Graham Cracker Crumbs
- 1/4 cup Granulated Sugar
- 1/3 cup Unsalted Butter Melted
Instructions
For the crust:
- Preheat the oven to 350°F.
- Grease a 9-inch springform pan with non-stick cooking spray.
- Press the crumb mixture into the bottom of the prepared springform pan up to the sides, using the back of a spoon to create an even layer.
- In a mixing bowl, stir together the graham cracker crumbs, granulated sugar, and melted butter until well combined.
- Bake the crust for 10 minutes or until golden brown.
- Remove the pan from the oven and let it cool while you prepare the filling.
For the filling:
- In a mixing bowl, beat the cream cheese and granulated sugar with an electric mixer until smooth.
- Add the eggs, one at a time, and beat until well combined.
- Add the vanilla extract and heavy cream and beat until the mixture is smooth and creamy.
- Pour the filling over the cooled crust.
- Cover the bottom and sides of the springform pan with aluminum foil to prevent water from getting in.
- Place the springform pan in a large roasting pan and pour hot water into the roasting pan, filling it about 1 inch high.
- Bake the cheesecake for 45 minutes or until the edges are set and the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven for 30 minutes.
- Remove the cheesecake from the roasting pan and let it cool completely before removing it from the springform pan.
- Serve the cheesecake chilled.
