Ingredients
- 1 Sweet Potato Peeled And Diced
- 1 can Chickpeas Drained And Rinsed
- 1 can Diced Tomatoes
- 1/2 cup Vegetable Broth
- 1 tbsp Olive Oil
- 1 Onion Chopped
- 2 Garlic Cloves Minced
- 1 tbsp Fresh Ginger Minced
- 1 tsp Ground Turmeric
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1/4 tsp Cayenne Pepper (Optional)
- Salt & Pepper To Taste
- Fresh Cilantro Or Parsley For Garnish
Instructions
- Heat the olive oil in a large skillet or pot over medium heat.
- Add the onion, garlic, and ginger and sauté until the onion is translucent.
- Add the turmeric, cumin, coriander, and cayenne pepper (if using) to the skillet and stir until fragrant.
- Add the sweet potato and chickpeas to the skillet and stir until coated in the spice mixture.
- Pour in the can of diced tomatoes and vegetable broth. Stir to combine.
- Cover the skillet and let the curry simmer for 20-25 minutes, or until the sweet potato is tender.
- Season with salt and pepper to taste.
- Serve the curry over rice or quinoa, and garnish with fresh cilantro or parsley.
