- 1 block Halloumi Cheese Cut Into Bite-Sized Cubes
- 1 Red Bell Pepper Cut Into Bite-Sized Pieces
- 1 Yellow Squash Sliced
- 1 Zucchini Sliced
- 1 Red Onion Cut Into Bite-Sized Pieces
- 1 cup Quinoa Rinsed And Drained
- 2 cup Vegetable Broth
- 2 tbsp Olive Oil
- 1 Lemon Juiced And Zested
- 2 tbsp Fresh Parsley Chopped
- 1 tbsp Fresh Mint Chopped
- Salt To Taste
- Pepper To Taste
Instructions
- Preheat the grill or grill pan over medium heat.
- Thread the halloumi cheese, bell pepper, squash, zucchini, and red onion onto the skewers.
- Brush the skewers with olive oil and season with salt and pepper.
- Grill the skewers for 5-7 minutes on each side, or until the vegetables are slightly charred and the halloumi cheese is golden brown.
- Meanwhile, in a pot with a lid, bring the quinoa and vegetable broth to a boil. Reduce the heat to low, cover the pot with a lid, and simmer for 15-20 minutes, or until the quinoa is fully cooked.
- In a mixing bowl, whisk together the olive oil, lemon juice and zest, parsley, mint, salt, and pepper.
- Add the cooked quinoa to the mixing bowl and toss to combine.
