- 4 Tomatoes Large, Ripe, Roughly Chopped
- 1 Cucumber Peeled, Seeded And Roughly Chopped
- 1 Red Bell Pepper Seeded And Roughly Chopped
- 1 Red Onion Roughly Chopped
- 2 Garlic Cloves Minced
- 3 tbswp Extra Virgin Olive Oil
- 2 tbsp Red Wine Vinegar
- 1 tbsp Lemon Juice Fresh
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Paprika
Optional Toppings:
- Cucumber Diced
- Fresh Parsley Chopped Or
- Basil Fresh
- Croutons
Instructions
- In a blender or food processor, combine the tomatoes, cucumber, red bell pepper, red onion, and garlic. Blend until smooth.
- Add the olive oil, red wine vinegar, lemon juice, salt, black pepper, and paprika to the blender. Blend again until well combined and smooth.
- Taste the Gazpacho and adjust the seasoning if needed.
- Transfer the Gazpacho to a large bowl or container and cover. Refrigerate for at least 2 hours to allow the flavors to meld together and the soup to chill.
- Once chilled, give the Gazpacho a good stir. If desired, top each serving with diced cucumber, chopped fresh herbs, or croutons for added texture and flavor.
