Salmon Chowder Recipe
Ingredients
- 1 lb Skinless Salmon Fillet Cut Into Bite-Sized Pieces
- 2 tbsp Unsalted Butter
- 1 Large Onion Chopped
- 3 Garlic Cloves Minced
- 3 Medium Potatoes Peeled And Diced
- 4 cups Chicken Broth OR
- Vegetable Broth
- 1 cup Whole Milk
- 1/2 cup Heavy Cream
- 1/2 tsp Dried Thyme
- 1 Bay Leaf
- Salt & Pepper To Taste
- Chopped Fresh Parsley (Optional For Garnish)
Instructions
- Melt the butter in a large pot or Dutch oven over medium heat.
- Add the chopped onion and minced garlic and cook for 2-3 minutes until soft.
- Add the diced potatoes to the pot and cook for another 5 minutes, stirring occasionally.
- Pour in the chicken or vegetable broth, add the dried thyme and bay leaf, and bring to a boil.
- Reduce the heat to low and simmer for 10-15 minutes until the potatoes are tender.
- Add the salmon to the pot and cook for an additional 5-7 minutes until the salmon is cooked through.
- Remove the bay leaf and stir in the whole milk and heavy cream.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped fresh parsley if desired.
