- 1/4 cup Milk
- Salt & Pepper To Taste
- 1 tbsp Olive Oil
- 1/2 Onion Diced
- 1 Red Bell Pepper Diced
- 1 Green Bell Pepper Diced
- 1 Jalapeño Pepper Seeded And Diced
- 4 Flour Tortillas (10-Inch Size)
- 1 cup Shredded Cheddar Cheese
- 1/4 cup Fresh Cilantro Chopped
Instructions
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the onion, red bell pepper, green bell pepper, and jalapeño pepper. Cook, stirring occasionally, until the vegetables are soft, about 5 minutes.
