Ingredients
For The Cake:
- 1 cup All-Purpose Flour
- 1/2 cup Unsweetened Cocoa Powder
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup Unsalted Butter Softened
- 1 cup Granulated Sugar
- 2 Egg Large
- 1 tsp Vanilla Extract
- 1/2 cup Milk
For The Filling And Topping:
- 1 can Cherry Pie Filling
- 1 1/2 cup Heavy Cream
- 1/4 cup Powdered Sugar
- 1 tsp Vanilla Extract
- Chocolate Shavings For Garnish
- Coctail Cherry For Garnish
Instructions
For the cake:
- Preheat the oven to 350°F.
- Line two 8-inch round cake pans with parchment paper.
- In a mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate mixing bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the eggs and vanilla extract to the butter mixture and beat until well combined.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, and beat until just combined.
- Divide the batter evenly between the two prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the centre of the cake comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
For the filling and topping:
- In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form.
- Place one cake layer on a serving plate and spread a layer of cherry pie filling over the top.
- Top the cherry filling with a layer of whipped cream.
- Place the second cake layer on top of the whipped cream and spread a layer of cherry pie filling over the top.
- Use an offset spatula to spread the remaining whipped cream over the top and sides of the cake.
- Top the cake with chocolate shavings and with cocktail cherries and refrigerate for at least 1 hour before serving.
